Hinckley's Fancy Meats recently had it's inaugural Trunk Show at Chef Matt's alma mater, Michael's Genuine Food & Drink in Miami, FL. Here's a quick recap in case you missed it:
We made several dishes that went right onto Michael's happy hour and dinner menu. And we loaded up our Yeti with fancy meats to sell. We brought:
Pumpkin Spiced Bacon
Grass Fed Sirloin Steaks
Wild Boar Breakfast Sausage
Grass Fed Bacon Burger
Smoked Antelope Sausage
During pre-shift we took some time to explain each of the Hinckley's Fancy dishes appearing on the menu. We also explain our philosophy of a clean and transparent food system, responsible farming, and ethical animal husbandry - all things the Genuine team is already quite familiar with.
We talked about the importance of propping up Central Florida farms to support our local economy. We discussed food deserts across the US and the importance of finding ways to get people who live in them some better food choices. And we chatted up invasive species, like the wild boar, and how putting them on a dinner plate can help to heal our ecosystems. Per usual, Michael's front-of-house team absorbed the info like a sponge and offered up lots of questions.

Rabbit & Smoked Pig Head Roulade pickled veggies. bitter greens.
The favorite of the evening? The BBQ Ribs! We had a lot of fun catching up with friends and we're looking forward to doing more trunk shows in the future.
