Tasso is a quick cured and hot smoked cut of pork shoulder found in many Cajun and Creole dishes. Use it in traditional dishes like Shrimp & Grits, Gumbo, Jambalaya or Red Beans & Rice. Or try new things like breakfast scrambles and hash, split pea or white bean soups, maybe even baked potato toppings. Also, feel free to just slice it thin and eat it on a charcuterie plate or in a sandwich. We use it to add a smoky punch to our Greatest American Hero sandwich.
