• Pig Foot, Lobster & Truffle Terrine

    This fancy terrine is made by slow cooking pork trotters until they start to fall apart.  We then pull all the succulent meat from them and add fresh truffles and seasoning.  To that we add steamed lobster meat and then mold into our triangle terrines. 


    This striking terrine yields about 12 portions and weighs about 1.5 pounds.  


    Try it with saltines and your favorite sparkling white wine.
