The pastrami behind one of our most popular sandwiches.  Our Pastrami On Rye made the USA Today's 10 Best list for Orlando.  We start with grass fed beef briskets that get rubbed with a curing mix with loads of coriander seed and black pepper.  After a few days on the cure they get a rinse and another generous rub of spices.  We hot smoke them over smoldering apple wood for about 4 hours.
