Maple Bacon Jam
Lots of people ask, "What am I supposed to do with the Maple Bacon Jam?", and the answer is usually, "Once you taste it, you'll know."
We use it as a sandwich spread on our BLT (in addition to our slab bacon). It's great on cheese boards with soft bloomy cheeses like Brillat-Savarin, L'Explorateur, or Brie.. Try it on English muffins, toast, bagels and other breakfast pastries. Smear it on pork chops coming off the grill.
It's made by grinding down the end cuts of our Bacon and the slow cooking it with onion, apple cider vinegar, brown sugar and fall spices. Once it cools we whip it with Verrmont maple syrup. And when we pack it we create some more pockets of maple syrup.
